The principal aim of this study was to optimize the spray-drying of a phenolic extract obtained from red grape waste skins in order to maximize the water solubility, the recovery yield and the antioxidant activity retention of the obtained powder. The following parameters were investigated: concentration and type of carriers (maltodextrins and pectins) and drying temperature.
