Ochratoxin A (OTA) is a mycotoxin which may occur naturally in grapes and in their derivative products, located in particular in southerm Europe and northem Africa areas. This report is about the fate of OTA during winemaking in order to define good manufacture practices (GMP) to eliminate or reduce the OTA hazard.
