The ever-increasing attention of consumers towards their own safely and environment protection is urging the food industry towards a global quality concept. This last considers not only food safety but also other quality properties required by consumers and the creation of a quality system which allows for staff and environment security. The increasing number of national and international provisions testify the evolution of the responsibility of both the governments in establishing the standards, legislation and enforcement programs necessary to control food quality and safety and of the industry in implementing quality assurance systems. On these bases, the application of a global quality system in the confectionery industry of "Torrone" is here presented.

Abstract
