The global environmental crisis and population growth make the promotion of sustainable food choices essential. Since food decisions are influenced by a complex web of factors—environmental, economic, cultural, psychological, and physiological—an interdisciplinary approach is necessary to understand and encourage sustainable dietary practices. This chapter explores how various scientific disciplines, including environmental science, agricultural science, food technology, nutrition, and the social sciences (such as sociology, psychology, political science, and law), contribute to the development of sustainable food systems. Recent trends in research are discussed to provide a comprehensive overview of scientific advancements in this area, with examples of interdisciplinary applications. Finally, attention is given to the complexity of evaluating interdisciplinary approaches to promote sustainable diets.
