The article discusses the ancient, incomplete Italian recipe book transmitted by the codex Firenze, Biblioteca Riccardiana, 1071, foll. 40r-67v (Fi), which is now offered in a new critical edition (§ VI) after other previous, unsatisfactory attempts (§ IV), and put into the context of the “Twelve Gluttons” tradition, that actually seems really to start from it (§ I.3). The antiquity of the manuscript, traditionally dated to the years 1338-’39, is analysed first of all through a re-examination of the writing and the watermark (§§ II-III), and a paleography expertise by Irene Ceccherini supposes that Fi could also be more ancient that we knew. The language of Fi, which is the most interesting element, is debated here, too: the paper tries to demonstrate its character of language for special purposes (§ I.2) and lastly provides a lexical index of the food vocabulary (§ VII).
