The essay investigates the development in eastern Lombardy of stable and transhumant breeding from the high to the late Middle Ages, with particular reference to the areas of the flat country and moutain pasture summer. Attention is also paid to dairy products, their types and the difference in the use of the words "cacio" and "formaggio" (cheese) since the Carolingian age.
Si indaga lo sviluppo nella Lombardia orientale dell’allevamento stabulare e transumante dall’alto al basso medioevo, con particolare riferimento alle aree di pianura e di alpeggio estivo alpino; attenzione è riservata anche ai prodotti lattiero-caseari, alle loro tipologie e alla differenza nell’uso dei termini “cacio” e “formaggio” sin dall’età carolingia.
