The consumers in last years have changed. They are no longer looking for foods exclusively for quality and their utilitarian value but searching for products that reflect their own values and beliefs. One of the most widely used construct to capture these psychological aspects is Food involvement (FI). Despite the undoubted value of FI construct, in literature there is a lack of scientific agreement on the essential dimensions and the measurement scales useful for evaluating it. Consequently, this dissertation aims to understand and explore the subjective and pragmatic investment that people feel toward food in order to understand and explain the phenomenon of FI, figuring out its role in predicting food consumption behaviours and in particular the consumption of cow's milk and non-dairy beverages. To achieve this aim, a mixed-methods study was implemented, combining both qualitative and quantitative approaches. The results highlighted how FI is a psychological process characterized by different facets. Moreover, this study created and validated a new scale of FI. It could be useful both from a research perspective, to better predict modern food choices, and as a tool to assess consumer need and to design more effective and tailored interventions to promote healthy food consumption.
Negli ultimi anni i consumatori sono cambiati. Non acquistano più cibi considerando esclusivamente la loro qualità, ma cercano prodotti che riflettano i propri valori e credenze. Uno dei costrutti più utilizzati per cogliere questi aspetti psicologici è il Food Involvement (FI). Nonostante l'indubbio valore di tale costrutto, in letteratura manca un accordo scientifico sulle dimensioni psicologiche che lo caratterizzano e sulle scale di misura utili a valutarlo. Di conseguenza, questa tesi si propone di comprendere ed esplorare l'investimento soggettivo e pragmatico che le persone provano nei confronti del cibo per capire e spiegare il fenomeno del FI, individuandone il ruolo nel predire i comportamenti di consumo alimentare e in particolare il consumo di latte vaccino e di bevande vegetali. A tal fine, è stato realizzato uno studio mixed-method, che ha combinato approcci qualitativi e quantitativi. I risultati hanno evidenziato come il FI sia un processo psicologico caratterizzato da diverse sfaccettature. Inoltre, questo studio ha creato e validato una nuova scala di FI la quale potrebbe essere utile sia per prevedere le scelte alimentari moderne, sia come strumento per valutare i bisogni dei consumatori e progettare interventi più efficaci e personalizzati per promuovere un consumo alimentare sano.
