The articles in this volume represent the final results of the research project "SALTUM" ("Sicurezza Alimentare - Tutela Multilivello"). Thanks to the sponsorship of Regione Lombardia (Fondo accordi istituzionali) and Fondazione Alma Mater Ticinensis, the research has been carried out by a network of Italian Universities, namely Università degli Studi di Pavia, Università degli Studi di Milano, Università Cattolica del Sacro Cuore and Università Carlo Cattaneo - LIUC, that have extended the idea of the project to other research centers in Italy and abroad. A multilevel approach has been adopted to present a transversal analysis of the food safety and quality principles and standards provided generally by public international law (Part I), with a special focus to the related aspects in international trade relations (Part II), by EU law (Part III) and, finally, with respect to private international law issues, as to the difficulties in solving the conflicts of jurisdictions and laws in case of an alleged violation of quality standards and IP rights (Part IV).
