The study is a reflection on the symbolic value of wheat in European peasant societies starting from the well-known affirmation of the historian Braudel regarding the originality of the European food system based on the combination of wheat and 'grass', i.e. agriculture and livestock. This particular worldview has remained practically intact until recently, as another great French historian, Jacques Le Goff, remarked so well when he spoke of the 'long Middle Ages'.

Lo studio è una riflessione sul valore simbolico del grano nelle società contadine europee a partire dalla nota affermazione dello storico Braudel riguardante l'originalità del sistema alimentare europeo basato sull'insieme di grano ed 'erba', cioè di agricoltura ed allevamento. Questa particolare visione del mondo è rimasta praticamente intatta sino a poco tempo fa, come ha rilevato così bene un altro grande storico francese, Jacques Le Goff quando ha parlato di 'medioevo lungo'.
