The agri-food industry is facing significant environmental and social challenges, as supply chains contribute significantly to greenhouse gas emissions and are affected by issues related to poverty, food security, and malnutrition. Agri-food companies not only need to address these challenges by improving the sustainability of their supply chains but also have to demonstrate their commitment to consumers. Blockchain technology and sustainability certifications address these needs by supporting companies in implementing sustainable practices while reducing information asymmetry with consumers. This thesis investigated both the factors influencing the adoption of these tools and the impacts resulting from their integration into supply chains. Additionally, an analysis was conducted to assess the effectiveness of these tools in influencing consumer preferences. In conclusion, this study aims to provide recommendations to policymakers and managers to improve the adoption process of these tools and ensure they meet expectations. Furthermore, it aims to understand how to communicate the commitment to sustainability to end consumers as effectively as possible.
L'industria agroalimentare sta affrontando importanti sfide ambientali e sociali, in quanto le filiere contribuiscono in modo significativo alle emissioni di gas a effetto serra e sono colpite da problemi legati alla povertà, alla sicurezza alimentare e alla malnutrizione. Le aziende agroalimentari non solo devono rispondere a queste sfide migliorando la sostenibilità delle loro filiere, ma devono anche dimostrare al consumatore finale il loro impegno a riguardo. La tecnologia blockchain e le certificazioni di sostenibilità rispondono a questi bisogni sostenendo le aziende nell’implementazione di buone pratiche di sostenibilità riducendo al contempo l'asimmetria delle informazioni con i consumatori finali. In questa tesi, sono stati investigati sia i fattori che ne influenzano l'adozione di tali strumenti sia gli impatti che derivano dall’integrazione di tali strumenti nelle filiere. Inoltre, è stata condotta un’analisi sull’efficacia di tali strumenti nell’influenzare le preferenze dei consumatori. In conclusione, questo studio si pone l’obiettivo di fornire suggerimenti ai policymakers e ai manager per migliorare il processo di adozione di tali strumenti e assicurare che rispondano alle aspettative. Inoltre, mira a comprendere come comunicare, in modo più efficace possibile, l’impegno verso la sostenibilità ai consumatori finali.
