Industrial waste grape skins are an abundant source of valuable polyphenols and antioxidants currently unexploited. Microwave Assisted Extraction (MAE) is an emerging technology for the extraction of polyphenols that improves the extraction performance and reduces processing time considerably. The present work evaluated the use of MAE for the extraction of polyphenols from Chardonnay dried waste grape skins obtained from the wine industry. The antioxidant power of the extracts was evaluated by the ABTS radical-scavenging activity and the polyphenols yield evaluated in terms of Total Polyphenols. A comparison with conventional solid liquid extraction, was done to compare MAE process efficiency.

Abstract
